Fall is here in the Northwest and the slow cooker is coming out of summer retirement. But if you need dinner on the table fast, try this easy 10 minute noodle soup recipe that kids love. My little ones love the soft noodles and filling chicken along with their favorite veggies - carrots and peas. Mix these up with a homemade chicken broth or do like I do and pour in a box of low sodium chicken broth for a no preservative, healthy dinner for the entire family.

Dress up Mom and Dad's serving with a garnish of dill, sliced avocado, croutons or corn chips and Tabasco for a southwest kick. If you opt to add the best parts of a rotisserie chicken, add the unused skin and bones to a pot of water and simmer for a couple of hours to make your own chicken broth for next week. Refrigerate your homemade chicken stock or freeze for future use. Pack this 10 minute noodle soup in a heat saving thermos for school lunches. Add some ritz crackers or saltines and a cheese stick for a balanced lunch. However you devour this quick and easy chicken soup, bon appetit and enjoy your 10 minute noodle soup!

10 Minute Noodle Soup

Serves: 2-4 hungry kids
Ingredients
  • 2 TBS olive oil
  • 2 small cloves pressed garlic
  • 3 medium carrots, peeled and diced
  • 3 c. low sodium chicken broth or homemade
  • 1 c. dry small noodles (egg noodles, shells, bow ties, elbow, your choice!)
  • 1/2 c. frozen peas
  • 1 rotisserie chicken or cubed chicken on hand
  • salt and pepper to taste
Instructions
  1. Cook garlic in olive oil in pot on medium heat for a minute (make sure you don't burn the little garlics)
  2. Add carrots and cook another couple of minutes
  3. Season with salt and pepper
  4. Add chicken broth
  5. Add noodles and set you timer to the al dente instructions on your noodles
  6. When the timer buzzes, add peas
  7. Cook another couple of minutes
  8. Take off heat and add chicken and let sit for a couple of minutes to warm chicken and cool down to a kids' temperature
  9. Taste test and add salt and pepper as desired
  10. Serve and enjoy!
