Mashed Potato Prep Tricks

Probably like you, I cook a lot for my family. Early in my cooking life, I instituted the 'clean as you go' method for meal and recipe preparation.

I absolutely live by this mantra and I hope you'll adopt it too!

Here are some ways to use the clean as you go method for garlic and herbed cheese mashed potatoes.

  • Use a scrap bowl for potato peels
  • Peel potatoes over the bowl and when peeling is complete immediately dump scraps into food waste bin, garbage disposal or compost.
  • Put ingredients away as you are finished with them: cream cheese, herbs, butter
  • Have tools out and ready to use
  • When tools have been used, drop them into the scrap bowl that you used for potato peels (empty now!) and fill with hot soapy water. 
  • When mashed potatoes recipe is complete, set aside and load dishwasher.
  • If transferring mashed potatoes to a baking dish, immediately fill mixing bowl with hot soapy water to sit.

Choose potatoes with the following features.

  • Limited 'eye' or indents
  • Full skin, not shriveled
  • No sprouting or the little green or white 'spikes' that indicate over exposure to light. 
  • No green spots

How Should I Store Potatoes?

Store potatoes in a cool, dark location in your kitchen, pantry, storage room or even garage.

Don't refrigerate potatoes as storing them at temperatures below 40 degrees F can increase the amount of sugar they contain. 

More sugar in potatoes results in producing higher levels of a chemical called acrylamide when the potatoes are baked, fried or roasted at high temperatures.

If potatoes sprout or show green patches, compost them and don't cook them. 

Sprouted or green on potatoes indicates the presence of solanine and chaconine, two natural toxins that in certain amounts can make a person ill.

Quick and easy savory mashed potato recipe that is great for holiday feasts and weeknight dinners!

Ingredients

  • 6 medium size Russet or other starchy potato
  • 1 roasted garlic bulb
  • 2 ounces cream cheese (or substitute 2 ounces herbed cheese such as Boursin and omit the next herb ingredient)
  • 2 TBS herbes de Provence
  • ¼ cup half and half
  • 6 TBS unsalted butter
  • Salt and pepper to taste

Instructions

  1. Wash, peel and cube potatoes into approximately 1" pieces
  2. Place potatoes in a large kettle and cover with water
  3. Bring kettle to a boil and let potatoes boil for approximately 10 minutes or until fork tender
  4. When potatoes are ready, strain them and place back in the kettle
  5. Mash potatoes with a potato masher
  6. Add cheese, herbs, half and half, salt and pepper to the potatoes
  7. Scoop potatoes into a shallow baking dish and top with 6 pats of butter
  8. Optional: place baking dish in oven set to 400 degrees F to melt butter
  9. Enjoy!
