Shopping for potatoes at the grocery store is easy to do! Unlike other produce, potatoes show you who they are at a glance.

Choose potatoes with the following features.

  • Limited 'eye' or indents
  • Full skin, not shriveled
  • No sprouting or the little green or white 'spikes' that indicate over exposure to light. 
  • No green spots

How Should I Store Potatoes?

Store potatoes in a cool, dark location in your kitchen, pantry, storage room or even garage.

Don't refrigerate potatoes as storing them at temperatures below 40 degrees F can increase the amount of sugar they contain. 

More sugar in potatoes results in producing higher levels of a chemical called acrylamide when the potatoes are baked, fried or roasted at high temperatures.

If potatoes sprout or show green patches, compost them and don't cook them. 

Sprouted or green on potatoes indicates the presence of solanine and chaconine, two natural toxins that in certain amounts can make a person ill.

My savory roasted garlic mashed potatoes recipe calls for a classic tuber option, the russet potato.

These little treats are a perfect way to celebrate game day, St. Patrick's Day or any old day! Experiment with fillings and toppings to delight your little leprechauns.

  • 12 round red potatoes
  • 6 slices cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 4 TBS unsalted butter
  • Salt and pepper to taste
  • Sour cream topping (not optional - yum!)
  • Chopped chives or green onions (optional topping)

Instructions

  1. Start by boiling washed and clean potatoes in a large kettle with plenty of water
  2. I boil my potatoes whole, but you can skip a step and cut potatoes in half and then boil. Just be sure to watch the potatoes so you don't over boil and they begin to fall apart a bit.
  3. Boil potatoes until fork tender - about 15-20 minutes whole and 10 minutes cut in half
  4. Pre-heat oven to 400 degrees F
  5. When potatoes are fully boiled, drain and rinse with cold water to cool
  6. When cool enough to handle, cut whole potatoes in half or take halves and use a PARING knife to cut out the potato flesh. I have tried every method of 'scooping' out potatoes and the paring knife is a clear winner.
  7. Cut a small bit of potato with skin off the bottom of each half so that they will sit up on the baking sheet and not topple over
  8. In a large mixing bowl combine potato, butter, cheese, bacon and salt and pepper
  9. Use a potato masher to mash potatoes and combine with a wooden spoon
  10. Scoop potato mixture into each potato skin half and place on sprayed or lined baking sheet
  11. Place baking sheet in oven and cook for 15 minutes until cheese is melted and potatoes are lightly browned on top
  12. Remove from oven, let cool for 5 minutes, plate to platter and top with sour cream and chives
  13. Enjoy!
