Easy No-Bake Chocolate Chip Mint Oreo Ice Cream Cake

This fast and easy chocolate chip mint oreo ice cream cake is just the thing to fend off hot summer days.

With just a few freezer items, some festive sprinkles, birthday candles and a cake stand, you'll be ready to celebrate too.

Try all kinds of your favorite cake ingredients to customize for your family and friends.

Here are some ideas to try.

  • Use baked brownie crumbles as crust and filling
  • Use blondie style sandwich cookies instead of chocolate

What if I don't have a springform pan?

Don't worry if you don't have a 9" or smaller springform pan. Instead, use a 13" X 9" casserole dish and decrease the thickness of each layer.

How do I crush all those cookies?

Add the full container of sandwich cookies to a large mixing bowl. With a potato masher, crush the cookies.

If you don't have a potato masher, try a large serving fork instead.

  • 1 package Oreo sandwich cookies
  • 3 TBS unsalted butter
  • 1 container chocolate chip mint ice cream
  • 1 container vanilla ice cream
  • 1 cup fudge sauce
  • 1 container Cool Whip or other frozen whipped topping
  • Sprinkles (optional)

Instructions

  1. Remove chocolate chip mint and vanilla ice cream containers from the freezer to soften for easy spreading.
  2. Next, prep a 9" springform pan with a circle of parchment paper.
  3. In a microwave safe bowl, melt butter.
  4. Crush all cookies package of Oreos and combine 2/3 of cookie crumbs with butter. (reserve 1/3 of crumbs for fudge filling)
  5. Press Oreo crust into springform pan.
  6. Add layer of vanilla ice cream.
  7. Combine fudge sauce with remaining crushed Oreos and layer on top of vanilla ice cream.
  8. Add layer of chocolate chip mint ice cream.
  9. Top with Cool Whip and sprinkles and freeze for 6 hours or overnight.
  10. When ready to serve, remove springform pan side, slide cake onto cake stand or plate and serve.
