Sparkling Hound Recipe | Grapefruit Mimosa
Spring is here and that means baby and wedding showers, get-togethers around brunch and sparkling beverages.
I'm sharing my favorite Sparkling Hound recipe that's a delicious pairing of dry champagne and tart ruby red grapefruit garnished with fragrant thyme and a grapefruit wedge.
My pal A shared this recipe with me as a riff on the classic greyhound cocktail, which pairs grapefruit juice with either gin or vodka and served over ice.
For brunch and breakfast, bubbles are a welcome replacement hence a 'Sparkling Hound.'
Mimosa vs. Bellini
I wondered about the provenance of the mimosa versus a bellini and discovered that a mimosa traditionally calls for French sparkling wine and pairs with citrus.
Bellinis on the other hand are a Venetian cocktail poured with Italian Prosecco combined with peach puree or other pureed fruit.

The pros as The Wine Buying Guide explain that "dry champagne isn't sweet...Look for "Brut" or "Extra Brut" on the label. [These are] usually more affordable than Champagne, which is great since you don't need to use an expensive wine for mimosas.
Refresher
Be sure to offer your guests water as they enjoy their sparkling hound mimosas.
I serve grapefruit and thyme infused water when I mix these drinks. To make your own tasty fruit and herb water, slice a couple of large grapefruit rings and cut these into sixths.
Add the grapefruit slices to a large pitcher of iced water along with a bundle of fresh, cleaned thyme.
Let the herbs and fruit steep in the water for an hour plus and enjoy.
Sparkling Hound Recipe
The key to a delicious Sparkling Hound is freshly squeezed grapefruit juice. This liquid bounty paired with a dry sparkling white wine is the perfect pairing.
To make your Sparkling Hound, prepare the following:
- Juice of two large ruby red grapefruits, approximately 8 ounces. Use your juicer or a large fork to extract the juice from the fruit.
- Strain the juice into a small pitcher or glass that's easy to pour.
- Prepare your champagne flutes with a sprig of thyme and a slice of grapefruit.
- Next, pour approximately 2 ounces of juice into 4-6 glasses.
- Top with sparkling wine.
