Arugula and Peach Summer Salad Recipe
My favorite part of summer is when the peaches arrive! Our local market stocks the BEST peaches aptly naming the season Peach O'Rama. Love it.
A recent Thursday had me dreaming of peaches and how I might use them for dinner without starting the grill on a 91 degree day in Seattle. I settled on this arugula and peach summer salad recipe that I've riffed off one of my other favorite salads that combines fruit and greens.
Here's what you need for your own arugula and peach summer salad
- bunch washed arugula
- 2 ripe peaches
- 1-2 small cooked chicken breasts or other protein. You could try skirt steak, fish or garbanzo beans - yum!
- 2 oz crumbled goat cheese
For the dressing:
- 1 TBS dijon mustard
- 1 TBS balsamic vinegar
- Salt and pepper
- 1 tsp strawberry or other summer fruit jam
- 1/4 C extra virgin olive oil
Here's what you do to make your tasty arugula and peach summer salad
Start by gathering your ingredients and mix up your dressing.
Whisk your mustard, vinegar and jam and add salt and pepper to taste. Now slowly drizzle your oil a few drops at a time as you whisk your dressing. The dressing will beautifully emulsify before your very eyes. Gorgeous!
Now, slice your peaches and plate your salad.
Top with your goat cheese and protein and enjoy!
