Bacon Cheddar Chive Biscuit Sliders

I got inspired to make a mini brunch item for all the springtime celebrations on the calendar. There is Easter, the Kentucky Derby, Mother's Day, Father's Day, Graduation parties, Baby and Wedding showers and always more to celebrate.

The only last minute preparation is scrambling up some eggs with chive, salt and pepper and a little cheese, which is optional.

For my eggs, I basically made a milk-free omelet and let it sit in the pan at rest. I then folded each side in on itself, slid the eggs out onto a cutting board and cut small squares of egg for my bacon cheddar chive biscuit sliders.

Bacon Cheddar Chive Biscuit Sliders
Perfectly sized tasty little biscuit sliders for brunch or any time!
Ingredients
  • 4 c Flour
  • 2 TBS Baking Powder
  • 2 tsp Salt
  • 1/2 c (1 stick) Salted Butter
  • 1 1/2 c Milk
  • 1 c Cooked, Chopped Bacon
  • 1 c Cheddar Cheese
  • 1/2 c Minced Chives
Instructions
Combine flour, baking powder and salt in a bowl.Cut butter into cubes and then add to bowl.Use your fingers or pastry cutter to cut in butter to dry mixture.When combined, add milk until dough forms.Add bacon, cheese and chives.Use an ice cream scoop to make your slider sized biscuits to place on an ungreased cookie sheet.Place biscuits in the fridge to cool for 20 minutes.Now, preheat oven to 450 degrees.Bake biscuits for 12-15 minutes.Enjoy!
