Banana Split Ice Cream Sandwiches
We spend a lot of our summer evenings eating al fresco. We hit the beach, neighborhood park, our own or a friend's back yard. When entertaining, I like to serve dessert that's easy to eat out doors and doesn't require silverware. That's why I'm sharing my banana split ice cream sandwiches for you to enjoy this season too!

Banana Split Ice Cream Sandwiches Recipe
Ingredients
Serves 8
- 16 Chocolate chip cookies - choose crispy or soft baked, whichever you prefer
- Container of your favorite vanilla ice cream - it's best to use a block of ice cream so that you can open up the paper sides and slice, then cut your ice cream into nice round discs.
- Nutella chocolate hazelnut spread
- 3 medium bananas
- 8-10 maraschino cherries
- Sprinkles
- Parchment paper
- Rubber bands, baker's twine or ribbon to secure parchment paper wraps
How To
Start by letting your ice cream warm up a bit to make cutting more easy.
Prep your ingredients by setting out cookies, sprinkles, Nutella and cherries.
Prep your bananas by thinly slicing them lengthwise to layer into your ice cream cookie sandwich.
Also, slice a handful of cherries into rounds to layer.
Now, spread a layer of Nutella on your bottom cookie, scoop on some ice cream, flatten with your top cookie, then remove the top cookie and layer on your banana and sliced cherries.
Place your top cookie back on and tidy up the sides of your ice cream sandwich with a spatula.
Now, roll the edges of your ice cream sandwich in sprinkles.
Wrap in parchment and tie up to secure.
Let your banana split ice cream sandwiches freeze for an hour.
Top with whipped cream and a cherry, then enjoy!
