Chicken, Broccoli and Rice Casserole Recipe
I read a really interesting though hardly scientific article on MSG (monosodium glutamate) in Lucky Peach magazine (sadly, they just shuttered). It made a thoughtful point about MSG and the fact that it's found naturally in foods we eat every day.
MSG is also responsible for the flavor called umami. Our tastebuds pick up a handful of flavors that we call salty, sweet, sour, bitter and umami. Umami is a newly recognized flavor and found in foods like aged meats, tomatoes, shellfish and Parmesan cheese, my favorite umami vehicle!
After learning more about umami and that deeply savory flavor it produces, I thought it would be fun to create a recipe that highlights Parmesan cheese. My chicken, broccoli and rice casserole recipe is so easy to make and bakes up in 50 minutes with golden Parmesan cheese crust and lots of umami flavor to go around!
Perfect Potluck One Pan Dish
This casserole is a great potluck option for easy entertaining. I used juicy rotisserie chicken in my recipe that I shredded and use the bones for a broth.
It only takes 5 minutes to prep. You then put in the oven, set the timer and move on to other activities.
On the off chance that there is any casserole left over after serving this at your next party, it makes the BEST lunch. Heat up a little leftover casserole for a tasty umami flavored lunch the next day and hopefully the next.

- 2 c Cooked, chopped or shredded chicken
- 2 c Fresh or frozen broccoli
- 2 c Instant rice
- 2 cans Cream of mushroom soup
- 1 soup can full Milk
- 1 soup can full Water
- 1 TBS Garlic powder
- 1 tsp Garlic salt
- 1 tsp Pepper
- 1-2 cups as desired Parmesan cheese
