Here's my favorite way to celebrate Mexican-American culture on Cinco De Mayo! It's my baked churro ice cream bowls that are sweet, savory and oh so good.
Cinco De Mayo is celebrated to commemorate the Mexican Army's unlikely victory over the French Empire at the Battle of Puebla, on May 5, 1862, under the leadership of General Ignacio Zaragoza.
These days we get to celebrate all the joy and richness that our Mexican-American community shares with us throughout the year, not just the 5th of May.
This light and eggy dough reminds me of a dense souffle batter that is then piped through a pastry bag with a large pastry tip. I used an Ateco #828 tip.

Churro Ice Cream Bowl Recipe
What's not included in the recipe below is ice cream. Be sure to fill these hot, tasty doughy bowls with your favorite vanilla or french vanilla ice cream. We love Dreyers Natural Vanilla Ice Cream.
- 1 c Water
- 1/2 c (1 stick) Unsalted Butter
- 2 TBS Sugar
- 1 TBS Brown Sugar
- 1/4 tsp Salt
- 1 tsp Vanilla Extract
- 1 1/3 c Flour
- 3 room temperature Eggs
- 1/4 c sugar
- 2 TBS cinnamon
