Churro Ice Cream Bowls

Here's my favorite way to celebrate Mexican-American culture on Cinco De Mayo! It's my baked churro ice cream bowls that are sweet, savory and oh so good.

Cinco De Mayo is celebrated to commemorate the Mexican Army's unlikely victory over the French Empire at the Battle of Puebla, on May 5, 1862, under the leadership of General Ignacio Zaragoza.

These days we get to celebrate all the joy and richness that our Mexican-American community shares with us throughout the year, not just the 5th of May.

This light and eggy dough reminds me of a dense souffle batter that is then piped through a pastry bag with a large pastry tip. I used an Ateco #828 tip.

Churro Ice Cream Bowl Recipe

What's not included in the recipe below is ice cream. Be sure to fill these hot, tasty doughy bowls with your favorite vanilla or french vanilla ice cream. We love Dreyers Natural Vanilla Ice Cream.

Churro Ice Cream Bowls
Delicious way to celebrate Cinco De Mayo or any old time!
Ingredients
  • 1 c Water
  • 1/2 c (1 stick) Unsalted Butter
  • 2 TBS Sugar
  • 1 TBS Brown Sugar
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 1/3 c Flour
  • 3 room temperature Eggs
  • 1/4 c sugar
  • 2 TBS cinnamon
Instructions
Preheat oven to 400 degrees.In a medium saucepan, melt butter in water with sugars.Bring water mixture to a boil then turn off heat.Add salt and vanilla and mix.Add flour and stir until dough forms.Make a well in dough and add one egg at a time, incorporating each after adding.Add dough to a pastry bag and pipe dough around an UPSIDE down standard size muffin tin that has been sprayed with cooking oil. Make sure you pipe your bowls so that dough does NOT meet. I skip every other muffin container.Bake for 25 minutes and let cool a little, but not too much!
Next, fill a bag with cinnamon sugar mixtures and coat bowls.
Fill with vanilla ice cream and top with sauce or not then dig in and enjoy!
