Do you love to use up foods in the fridge as much as I do, especially when heading out of town?
My husband and I make it a game to clean out the fridge by using up leftovers, vegetables, sauces and other delicacies by repurposing into *exciting* new recipes.
Here's my super easy and fast clean out the fridge frittata that I will make before a road trip or big grocery shopping trip that I know will restock the fridge.
Making room for fresh foods is essential, non?!
Easy Frittata Recipe Tips
This meal could not be easier to pull together in just 20 minutes total prep and cook time.
- I start with my cast iron skillet that's been seasoned with lots of use.
- I'll prep all my ingredients and mix in a large bowl so that I'm ready to simply pour it into my skillet when my veggies are done sautéing.
- I use a whisk for my eggs and a wooden spoon to blend ingredients.
- I preheat my oven to 400 degrees F so it's ready to go after the frittata has a chance to set for a couple of minutes on my gas burner.
- I place my skillet on the oven's middle rack for easy, balanced baking.
- I watch my frittata just a little, but start with 7 minutes of cook time. Our family likes our eggs pretty set, so I err on a little longer.
- Longer cook time creates some delicious browning too!
Foods to Mix into your Clean the Fridge Frittata
Half used vegetables including onions, garlic, tomato, spinach,
Half used bags of frozen veggies - thaw them or defrost in the microwave before cooking.
Cheese - Parmesan, shredded cheddar, mozzarella, or blended shreds, goat, herbed, string cheese! - whatever is looking like it should be used up for some
Proteins - cooked bacon, chopped or sliced deli meats, any shredded chicken, pork or beef
More Thoughts on the Frittata
As this meal is gluten free, it opens up lots of possibilities for those avoiding wheat and gluten.
One way that I make my 'crust' without flour is by using onions as my frittata base. If you don't have an onion on hand, try other veggies such as sliced potatoes to make a delicious Spanish style tortilla.
Dense root vegetables are great options too.
