End of Summer Party Platter Salad | Peach, Arugula and Mozzarella
The end of summer is always bittersweet at our house. We're sad to say goodbye to long days and unstructured time, but excited for the new adventures of school and reuniting with friends in the classroom. My end of summer party platter salad featuring peach, arugula and mozzarella is a fun and easy way to keep the taste of summer going if little else!
I love to serve salad on a platter as I've found common in European salad dishes. The opportunity to feature every ingredient comes naturally with little effort. This is a great way to create a gorgeous party buffet and always a welcome treat at a potluck lunch or dinner.
For my fresh summer peach, arugula and mozzarella salad, I simply spread arugula on the base of my platter. You could opt for mixed greens if you prefer. The spicy arugula can be a little bitter for some.
Next, sprinkle quartered mozzarella balls or cubes onto the platter. Then add pitted, chopped peaches. For some crunch, I toasted a 1/4 cup of pine nuts in a small pan on the stove adding salt and pepper.
To dress my salad, I drizzle aged balsamic vinaigrette and extra virgin olive oil over the platter and liberally grind salt and pepper to taste.
This salad doesn't need to be tossed, but if you feel compelled, I recommend waiting until guests begin eating to share the beauty and bounty of this end of summer party platter salad to the max!
