My low carb bacon, spinach and cheese egg casserole isn't the fastest recipe to make in the morning, but it is one of the most delicious!

The recipe requires you to cook your bacon before assembling, which adds approximately 15 minutes to the preparation.

Because my family lives for bacon, twice a week or so, I will cook up a package and store cooked bacon strips that I use for the week's recipes.

My bacon, spinach and cheese egg casserole is so easy to assemble and just as easy to clean up.

Simply layer the ingredients and place in the oven to bake for 30 minutes.

Bacon, Spinach and Cheese Egg Casserole
Low-carb breakfast casserole is high on flavor and ease!
Ingredients
  • 1 cup sliced mushrooms
  • 1/2 frozen spinach
  • 1 large or 2 small garlic cloves, minced
  • 4 eggs
  • 4 slices cooked bacon, crumbled
  • 1/4 cup Parmesan cheese
  • Cooking spray
  • Salt and pepper
Instructions
Preheat oven to 375 degrees.Spray 8"x8" baking dish with cooking spray.
Start by cooking bacon in a pan. 
When bacon begins to brown, add mushrooms to one side of the pan to begin cooking.
Meanwhile, crack eggs in a bowl and whisk to combine. Add salt and pepper as desired.
When bacon is done cooking remove and place on paper towel to drain fat.When bacon is cool, cut or hand crumble.
As mushrooms continue to cook, add minced garlic to pan to cook for just 30 seconds or until fragrant.
Take mushrooms and garlic off heat and add to baking dish.
Layer on spinach.
Pour in eggs.
Sprinkle on cheese
Top with bacon.
Place uncovered in oven and bake for 30 minutes.
Take out, let cool for 5 minutes and then dig in!
Serve with sliced avocado for a yummy meal.
