My Washington Box showed up with a dozen perfectly picked and fully ripe fruits and vegetables. I was delighted by the quality of the fruit that we quickly cut and ate. The greens were bright and hydrated and the radishes the most beautiful pink!

Northwest Nicoise Salad Recipe

Ingredients

  • 1 head butter leaf lettuce
  • 1 pint cherry tomatoes
  • 1 bunch radishes
  • 1 red d'Anjou pear
  • 1 avocado
  • 1/2 c nicoise olives
  • 3 hard boiled eggs
  • 2 small grilled, baked or poached salmon filets

Dijon Vinagrette Dressing

Combine 1 TBS Dijon mustard with 2 TBS minced shallots, 2 TBS white wine vinegar, salt and pepper. Slowly add 1/2 cup olive oil. Dress salad before serving and toss.

Instructions

To make your fresh from the field Northwest Nicoise Salad, clean and prep all ingredients in the list above.

Layer butter leaf lettuce in a bowl and top with fresh ingredients.

Slice hard boiled eggs and give the salad a few turns of your pepper mill.

Dress and toss salad and plate, then top with grilled, baked or poached salmon filets.

Cauliflower Fried Rice Recipe

With all the abundant veggies in the Standard Washington Box including a head of beautiful cauliflower, I got to try a few new recipes. My husband's colleague has been raving about cauliflower rice for weeks now and I tried this recipe for Cauliflower Fried Rice from Skinny Taste for our meatless Monday. Yum from around the table!
