Peanut Butter Cup Brownie Cupcakes
Peanut butter cups are my favorite Halloween candy, but I don't reserve my enjoyment for any particular season!
I make these peanut butter cup brownie cupcakes when I want a treat with extra yummy peanut butter flavor and lots of crusty brownie edges.
If you decide to share them, my guess is your friends and family will love them too!
Peanut Butter Cup Brownie Cupcake Recipe
Ingredients
Brownie Batter
- 1 1/4 cups all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 1/2 cup cocoa powder
- 3/4 cup butter, melted
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 2 Tbsp milk
- 8 chunky chopped standard size peanut butter cups
Instructions
Preheat oven to 350 degrees.
In a mixing bowl whisk together flour, baking powder, and salt. Set aside.
In a separate mixing bowl, whisk together granulated sugar, light-brown sugar, and cocoa powder. Pour in melted butter and use a wood spoon to stir until combine.
Mix in eggs and vanilla extract. Stir in milk.
Add dry ingredients to wet ingredients and stir to combine.
Pour chopped peanut butter cups into batter and stir.
Pour batter into 12 paper lined muffin cups filling each about 2/3 full.
Bake for 16 - 20 minutes until a toothpick inserted in the center comes out clean. If you like gooier brownies, bake for 14 to 15 minutes.
Cool in muffin tin for a few minutes then transfer to a wire rack to cool completely.
