Peanut Butter Mascarpone Jelly Sandwich Cookies

Have you ever created a recipe around one minor, but important ingredient? Thought so! I whipped up these peanut butter mascarpone jelly sandwich cookies over my love affair with mascarpone cheese.

I had bought some mascarpone cheese for a delicious rigatoni pasta dish I made for dinner the other week. (Please make this pasta dish too. If you like mushrooms, you will love it!)

As I never like to have a food supply go to waste, I pondered that 4 oz. of mascarpone cheese sitting on the top shelf of the fridge. For those of you might not have tried mascarpone cheese, it's an Italian cheese with a deliciously rich cream cheese consistency and a bit of a sour cream taste.

Back to the story, I had just made my favorite homemade nutter butters and was still enjoying that recipe kick. I thought about how much my family and sweet neighbors loved those nutter butters and voila! Why not combine a peanut butter cookie with a mascarpone jelly filling? Seriously, why not?!

Easy to Make, Easy to Love

The beauty of this cookie recipe is that you'll get a ton of mileage from just a short 20 minutes or so of work.

My classic peanut butter cookie recipe is so easy and fast. I use a smaller batch in this recipe because I find that unlike chocolate chip or oatmeal cookies, peanut butter cookies are best enjoyed in the first couple or few days of making them.

Once your cookie dough is made, it's a quick mix of mascarpone cheese, 1/4 cup of your favorite jelly and 3/4 cup of powdered sugar.

Even with what sounds like a conservative amount of filling, I had extra left over and let me tell you, was I ever delighted!

Smear a spoonful of your remaining mascarpone jelly filling on a toasted english muffin and let me know how much you enjoyed THAT!!

Peanut Butter and Mascarpone Jelly Sandwich Cookies
Run don't walk to your grocery store to pick up a tub of mascarpone cheese to make these savory and sweet cookies!
Ingredients
  • 1/2 c (one stick) Unsalted Butter (room temp)
  • 1/2 c Sugar
  • 1/2 c Brown sugar
  • 1/2 c Creamy peanut butter
  • 1 medium Egg
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 1/4 c Flour
  • FILLING
  • 4 oz (1/2 tub generally) Mascarpone cheese
  • 1/4 c Favorite jelly (I use strawberry)
  • 3/4 c Powdered sugar
  • 1 tsp (optional) Milk
Instructions
Start by preheating oven to 375 degrees.Combine butter, sugars and peanut butter.Add egg and vanilla.Whisk together flour, baking soda and powder in a bowl.Slowly add dry mixture to wet until combined.When dough comes together, use teaspoon to make small 3/4" balls. Place balls on ungreased cookie sheet. Use a fork to create classic peanut butter cookie cross hatch marks and flatten cookies.Bake cookies for 8 minutes.While cookies are baking, combine mascarpone, jelly and sugar. Add milk only if needed. This can make your filling a little too runny. Watch it!Pop the filling in the fridge while you pull out cookies and let them cool on the pan for a few minutes then transfer to a wire rack to fully cool.When cookies are good and cool, fill those babies up with filling. Share and enjoy!
