Celebrate the autumn season and Halloween with these easy to make and fun to eat pumpkin cream puffs with candy stems. This classic French pate a choux dough comes together so quickly let the kids make them with you!
I got inspired to make these little pumpkin cream puffs by my daughter's French class. They've had so much fun studying French culture in class that I thought it would be fun to try a French recipe on a play date.
By adding just a little powdered food dye to the dough and ample amount of pumpkin puree and pumpkin pie spice to the filling, we made a very tasty seasonal treat. Madame loved them too!
I felt we needed to be a little obvious in our cream puff as pumpkin design so I melted green candy melts in a piping bag in the microwave and quickly created the candy stems.
I placed a toothpick on a parchment lined cookie sheet and then piped the shape of a stem, leave and curly Q for each candy stem.
As the toothpicks are longer than the height of most of our cream puffs, I had to break them in half. That was easy work! Here's how the stems look from the back.
While the cream puffs bake, it's fast work to create the pumpkin filling. These cream puffs can also be used for any number of flavor creations. I'm planning to do a birthday cake cream puff for the next family birthday. It will involve many sprinkles!
But as Halloween is the next holiday on the calendar, we'll be serving these to family and friends who come calling. I'll set our a cake stand tray full of cream puffs for our Halloween party that we host before trick-or-treating begins. Every little ghoul will be ready to take to the neighborhood for fun!
- 1 cup milk
- 1/2 cup unsalted butter
- 1/4 tsp salt
- 1 cup flour
- 4 eggs, room temperature
- 1/4 tsp orange powdered food coloring
For Pumpkin Cream Filling
- 1 cup heavy whipping cream
- 1/2 cup pumpkin puree
- 4 oz. cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp pumpkin pie spice
For Candy Stems
- Green candy melts
- Toothpicks
- Piping bag
- Parchment paper
- Cookie sheet or plate
