I got inspired to make these little pumpkin cream puffs by my daughter's French class. They've had so much fun studying French culture in class that I thought it would be fun to try a French recipe on a play date.

By adding just a little powdered food dye to the dough and ample amount of pumpkin puree and pumpkin pie spice to the filling, we made a very tasty seasonal treat. Madame loved them too!

I felt we needed to be a little obvious in our cream puff as pumpkin design so I melted green candy melts in a piping bag in the microwave and quickly created the candy stems.

I placed a toothpick on a parchment lined cookie sheet and then piped the shape of a stem, leave and curly Q for each candy stem.

As the toothpicks are longer than the height of most of our cream puffs, I had to break them in half. That was easy work! Here's how the stems look from the back.

While the cream puffs bake, it's fast work to create the pumpkin filling. These cream puffs can also be used for any number of flavor creations. I'm planning to do a birthday cake cream puff for the next family birthday. It will involve many sprinkles!

But as Halloween is the next holiday on the calendar, we'll be serving these to family and friends who come calling. I'll set our a cake stand tray full of cream puffs for our Halloween party that we host before trick-or-treating begins. Every little ghoul will be ready to take to the neighborhood for fun!

Pumpkin Cream Puffs with Candy Stems
Versatile pate a choux dough recipe can be used for all kinds of dessert and treat recipes from cream puffs to eclairs and churros! 
Ingredients for Cream Puff Dough
  • 1 cup milk
  • 1/2 cup unsalted butter
  • 1/4 tsp salt
  • 1 cup flour
  • 4 eggs, room temperature
  • 1/4 tsp orange powdered food coloring

For Pumpkin Cream Filling

  • 1 cup heavy whipping cream
  • 1/2 cup pumpkin puree
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp pumpkin pie spice

For Candy Stems

  • Green candy melts
  • Toothpicks 
  • Piping bag
  • Parchment paper
  • Cookie sheet or plate
Instructions
Preheat oven to 400 degrees.
To Make Your Candy Stems
Start by making your green pumpkin candy stems. Melt 1/2 cup green candy melts in a plastic piping bag in the microwave for 1 minute or until soft.
Next, place the number of toothpick you want for your stems on a cookie sheet lined with parchment paper. This cream puff recipe makes 4 dozen cream puffs. 
Now, snip the pointed end off your piping bag and pipe little stems, leaves and curly stems on top of the toothpicks. 
Let the candy harden and make your dough and pumpkin cream filling.
To Make Your Dough
In a medium saucepan combine water, butter and salt.
Bring the mixture to a boil over medium high heat.
Once the butter is melted and your mixture is boiling add the flour all at once and reduce heat to medium.
Use a wooden spoon to continuously stir the dough.
Add a 1/4 tsp of orange powdered food dye to the dough.
Stir dough for about 3-4 minutes until a light crust forms on the bottom of the pan.
Transfer dough to a large mixing bowl and push the end of your wooden spoon into the dough to let out the steam/heat. Do this for a few minutes until dough cools to room temperature.
Now, add one egg at a time stirring to to incorporate each egg into the dough as added.
Transfer the sticky dough into a pastry bag and cut the tip off to make 1.5" diameter cream puffs.
Pipe dough onto 2 parchment lined cookie sheets approximately 2" apart.
With wet fingertips press down tops of cream puffs to smooth.
Bake at 400 degrees for 23-25 minutes until lightly brown on top.
When removing from oven, pierce each cream puff with a toothpick or sharp knife tip to release the steam.
Let cream puffs cool and make your filling.
When cooled, cut in half - top from bottom 
To Make Your Filling
In a stand mixer, beat whipping cream until stiff peaks form.
In a large mixing bowl combine all other ingredients.
Fold whipped cream into mixing bowl to finish your filling.
Fill a piping bag with filling, cut off the tip of the bag and fill your cream puffs.
When cream puffs are complete, break toothpicks in half to shorten the candy stems and insert in the top of the cream puffs.
Serve and enjoy!
