How many of the recipes you make stir up fond memories of friends and family? Many, I hope! My roasted tomatoes and garlic burrata recipes is one for me.
This easy, slow cooking recipe of roasted tomatoes and garlic with burrata cheese and crackers takes me back a handful of years ago to summer with friends.
I first started making it then when my friend, C, served and thankfully shared her recipe.
It's the perfect dish to share with friends and multiplies as needed. Consider doubling my recipe below for a party of 6 adults or more.
The only hard parts are deciding which combination of flavors you'll stack up and waiting your turn to dig in!
I serve my roasted tomatoes and garlic with burrata cheese on a simple white platter that features the colors of the tomatoes and dark, rich balsamic vinegar.
The white burrata cheese and natural garlic accent the entire dish. What a vision to tempt everyone's tastebuds!
I always serve two types of crackers. One whole grain version with lots of flavor and another crispy flour cracker with a sprinkle of sea salt.
A Dish for Every Season
During the summer, we make this with farmer's market bounty, but as we head into fall, store bought, colorful tomatoes work great too!
I love this recipe for all seasons as you can add and subtract ingredients to your roasting pan.
Here are some other vegetables to try in this slow roasting recipe.

- Sliced sweet onions such as Vidalia or Walla Walla Sweets
Consider any veggie that will soften to a spreadable consistency, but not break down too much when set in the low heat oven for two to three hours.
Appetizer or the Main Event?
This nutritionally balanced recipe makes a great vegetarian meal.
Add a protein such as a grilled fish or chicken and you have a family favorite in the making.
I also love to pair this dish with a salad. I'll skip the crackers and top a head of chopped romaine with my roasted tomatoes, chopped garlic and cheese.
I'll drizzle balsamic vinegar and olive oil then grind some pepper and salt for a great dinner salad.
For lunch, I'll slice some grilled chicken, scoop some tomatoes, add my garlic and cheese and roll up in a tortilla for a lunch wrap to go.
