Roasted Salmon with Balsamic Arugula Salad
The dog days of summer are not yet behind us so we all need dinner menu ideas that are easy to make, not too hot and very satisfying.
I'm sharing a standard in our dinner rotation. I hope you'll try this roasted salmon with balsamic arugula salad recipe that features a knock out fish spice rub.
I use acclaimed Seattle chef, Tom Douglas', spice rubs on all kinds of meat.
And this oven roasted salmon tastes delicious with a peppery arugula salad and creamy avocado topped with zesty, sweet balsamic vinegar.
Salmon Rub Recipe
Fins down, Tom Douglas' salmon rub is the best blend of spices to dress up your salmon.
If you want to make a close second, you can blend your own spices this way.
Combine the following ingredients in a small dish. Triple the amounts to have some left over to use for another meal. Store in an air tight container.
- 2 TBS Brown sugar
- 1 tsp Smoked paprika
- 1 tsp Ground thyme
- 1/2 tsp Flake salt
- 1/2 tsp Black pepper
Drizzle a little olive oil on your fish filet and thoroughly coat with your spice blend.
Chef's Secret to Perfectly Cooked Salmon Every Time
The trick to perfectly oven roasted fish is to have your fish prepped and ready and on a pan.
Turn your oven to 400 degrees F and set a timer for 20 minutes.
Put your salmon right in the oven BEFORE it preheats and let it roast until your timer buzzes.
This works perfectly for fish approximately 1"-2" in thickness. If you're cooking a thicker filet and don't like your fish too rare, let it go another minute or two - no more!

- One 1" thick salmon filet to feed approximately 4-6 oz. per person
- 1 TBS olive oil (for fish)

- 3 cups washed arugula
- 1-2 large tomatoes, sliced
- 1 avocado, sliced
- 2-3 TBS balsamic vinegar
- 2-3 TBS olive oil
- Lemon slices for garnish (optional)
