It's not uncommon for me to make this meal and then eat it three times in a row! When snow hits the Pacific Northwest it's reason to celebrate.

While snow day schedule changes can be inconvenient, it's a great chance to stop and enjoy nature and each other.

Superb Soup and Sandwich

Soup is one of our family's favorite treats on winter days. We also love cold soups in the summer time.

My creamy carrot and ginger soup is a winner for the kids because of their instinctive love for carrots. The simmering of the soup along with the little kick of ginger helps sweeten the carrots too.

The soup comes together with just 5 to 10 minutes of prep time and over 30 minutes simmering on the stove.

I love to get all my veggies chopped, cooked and let them simmer away while I go tackle something on my To Do list.

When I come back the soup is ready for a minute or so under the immersion blender (I start with High setting and then pulse on low) and a stir of the creamy half and half.

I've used both half and half and canned coconut milk in this recipe and both are delicious. When I use coconut milk, I like to serve the soup with my ginger and garlic marinated pork banh mi sandwiches. Yum!

Satisfying Texas Sized Appetites with Texas Toast

It's very recently that I've fully thrown my heart and stomach behind Texas Toast. I used to reserve the thick cut bread for spaghetti dinners, but I now use it all the time with grilled sandwiches, cold sandwiches and french toast in the pan or casserole dish.

I'm so glad I was encourage by my son to buy an extra loaf before the snow hit!

Texas Toast makes the absolute best grilled sandwiches because of the delicate crust it forms with the butter in the pan.

But delicate it is and watch that you don't burn your toast before the cheese fully melts.

I put my gas burner on low side of medium low for safe toasting!

Creamy Carrot and Ginger Soup with Grilled Ham and Cheese Sandwich on Texas Toast Bread

Snow day lunch menu for the whole family! This hearty and healthy soup and sandwich combo will nourish for the next round of sledding and snowball fights.

Ingredients for Soup

  • 3 TBS olive oil
  • 1 medium onion, diced
  • 5 cups diced carrots
  • 2 TBS finely chopped ginger
  • 2 cloves finely chopped garlic
  • 2 cups vegetable stock
  • 1 TBS turmeric
  • Salt/Pepper to taste
  • 1 cup half and half or one can full fat coconut milk

Instructions for Creamy Carrot and Ginger Soup

  1. In a large pot on the stove, cook onions in olive oil until soft, 5 minutes.
  2. Add ginger and garlic, cook 1-2 minutes.
  3. Add carrots, stock, turmeric and salt and pepper.
  4. Bring to a boil, then simmer on low, covered, for 30-40 minutes until carrots are soft.
  5. Take off heat and use immersion blender to blend in pan. If no immersion blender, use a stand blender in batches or a hand mixer to combine.
  6. Add half and half or coconut milk and stir to combine.
  7. Set aside and prepare sandwiches.

Ingredients for Sandwiches

  • Texas Toast style bread
  • Deli ham
  • Sliced cheddar cheese or American cheese
  • Butter, softened

Instructions for Ham and Cheese Sandwich

  1. Heat a pan on low.
  2. Layer ham and cheese between two slices of Texas toast style bread.
  3. Spread butter on outer side of each piece of bread.
  4. Place in pan and set timer to 3 minutes.
  5. Check bread and flip to grill for another 3 minutes or until cheese has melted.
  6. Serve hot and melty sandwich with creamy carrot and ginger soup.
  7. Enjoy!
