Gluten-Free Vegan Banana Chocolate Muffins
I have to confess that while I love a sliced banana on my daily oatmeal, I also love peering into the fruit bowl to discover a couple of spotty brown bananas.
I can do without the friendly fruit flies, but that's another topic to tackle later.
I love to find the over ripe bananas because I'm then compelled to make some banana bread.
This is a super fast gluten-free vegan banana chocolate muffins recipe compiled from lots of recipes including our original family favorite from our preschool teacher that we call Georgie Cake in honor of Curious George, our hero.
I've made this fast, easy, gluten-free and vegan too.
These little Georgie Cakes will have your little (and big!) monkeys chattering for more.
Gluten-Free Vegan Banana Chocolate Muffins Tools
- 2 bowls
- mixing spoon(s)
- measuring cup
- measuring spoons
- 12 muffin tin
- 9 standard muffin papers
- cooling rack
Ingredients
- 1 c gluten-free flour
- 1/2 c light brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 2 overripe mashed bananas
- 1/4 c organic unsweetened applesauce
- 1/4 c light extra virgin olive oil
- 1 tsp vanilla extract
- 1/2 c dairy free mini chocolate chips
Instructions
- Turn on oven to 350 degrees
- Prep muffin tin with 9 paper wrappers
- Combine dry ingredients in one bowl
- Mash bananas in the other bowl then add applesauce, olive oil and vanilla
- Add wet ingredients to dry and mix
- Add chocolate chips to batter
- Pour or spoon batter into papers approximately 3/4 full (these muffins will come to just over the top of the muffin paper)
- Place in oven and bake for 18 minutes or until a toothpick comes out clean from center of largest muffin.
