Gluten Free Vegan Razzle Apple Streusel Bars
In the mood to razzle dazzle your next dinner company or bake sale customers? Gluten Free and Vegan Razzle Apple Streusel Bars in 14 minutes of work using seasonal fruit will satisfy any crowd. It's likely you have some version of this in your wheelhouse, but as the Natural Maker Mom I've tried to optimize the efficiency with which you'll have a delicious treat ready to serve and delight. Time Specs: 14 minute prep time, 35 minute bake time My Aunt K shared this recipe with me that I've converted for the gluten-free, vegan among us. I've also cut the sugar and jam load by half. The flavor stays, but the higher sugar content goes. You should also feel free to substitute with regular flour and fat as you wish. chef. You'll need these ingredients:
- 1 c gluten free rolled oats
- 1 1/4 c gluten-free flour blend (Bob's Red Mill or your fave custom combo)
- 1/2 c sugar
- 1 tsp baking powder
- 1/2 c melted coconut oil
- 2 medium to large sized peeled and thinly sliced organic (and/or locally grown) apples (Aurora seen here. Incredibly sweet and crunchy)
- 1 Tbs gluten-free flour
- 1/2 c seedless raspberry jam or fruit spread (we prefer seedless jam, but you choose your favorite style)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 glass bowls (1 for streusel 1 for fruit/jam)

- 8"x8" glass pan
- Heat oven to 375 degrees (1 min)
- Gather ingredients from pantry, fridge and drawers (2 min)
- Grab bowl and combine measured oats, flour, sugar and baking powder. (2 min)
- Add oil until moistened. (1 min)
- From bowl, spoon approximately 1/3 streusel (dough) into bottom of pan and press into corners. (.5 min)
- Place in oven and bake for 15 minutes (.5 min)
- While the streusel crust is baking, peel and thinly slice apples. Place in bowl. Spoon in jam, sprinkle in cinnamon and nutmeg and combine. (15 min. It won't really take you this long so while you're waiting clean your prep area and drink a glass of water to hydrate.)
- When the timer rings, remove the streusel crust from oven carefully (so you don't burn yourself) and spoon the fruit mixture into the pan. Top fruit with remaining streusel and sprinkle with a little more cinnamon if you like. (1 min)
- Place pan back in oven and bake for 35 minutes and/or until lightly browned on top. (.5 min/35 min.)
