Game Day Vegetarian Nachos
There's nothing like the excitement that comes with the Big Game and the prospect of a WIN. This year my (our? their?) Seattle Seahawks are facing the New England Patriots in the Super Bowl 49 Championship Game. As a 12th woman, I will be rooting on those mighty players surrounded by friends and kids and loving it! For this year's annual Super Bowl party potluck, I'll serve Game Day Vegetarian Nachos that are as tasty as their meat-topped cousins and a bit healthier - the cheese, sour cream and tortilla chips make it just shy of 'health food'!
I always cook my nachos in my 12" Lodge cast iron skillet that has been seasoned with love, bacon, plenty of nachos and roasted chickens. Yum! The size is perfect and it's not too heavy to remove from the oven with one hand if necessary. Using an oven safe skillet or pan makes serving easy and fun. Please be careful and use plenty of hot pads when serving. I wrap a kitchen towel around the side of the skillet where I'm serving and make sure to warn guests. - Bag tortilla chips (Juanitas brand is the best, imo)
- 1 TBS olive oil
- 1 can drained and rinsed low sodium black beans
- 1 small diced yellow onion
- 1 TBS dried cumin
- 1 TBS dried coriander
- 1 Tsp garlic powder
- 1-2 cups mild cheddar cheese
- Optional toppings - the more the merrier!
- Lime
- Diced tomatoes
- Green onion/scallions
- Jalapeno peppers
- Black olives
- Cilantro
- Avocado (not optional! :)
- Sour cream
- Pico de gallo
- Salsa
- Dash Tobasco
- Start by making your refried black beans to give your Nachos the protein that makes them so satisfying.
- Cook diced onion in olive oil on medium in a small pot for 3 minutes or until onion is soft.
- Add drained beans and spices plus salt and pepper.
- Cook down until liquid is mostly cooked out and start smashing your beans with the back of your wooden spoon against the side of the pot.
- Meanwhile, as beans are cooking turn oven to 450 degrees
- Pull out an oven safe skillet (cast iron here)
- Place a bottom layer of chips in the skillet
- When beans are done layer 1/2 the beans on chips, top with cheese and repeat another complete layer so you have cheese on top when done
- Place in the oven for 5 minutes and watch as cheese melts and is done to you liking.
- Remove from oven and top with all your delicious and fresh condiments.
- Squeeze lime over the whole mess and enjoy! Go team!
