Candy Corn Marshmallows | White Hot Chocolate Recipe
I've wanted to make homemade marshmallows for ages and not sure why I haven't before now. These candy corn marshmallows are the easiest and tasty confection around!
I used the Barefoot Contessa's marshmallow recipe as I love anything that comes out of my kitchen via Ina Garten. I altered the recipe a bit in that I layered candy corn and yellow and orange M&Ms on the bottom of my pan, on top of the parchment paper, and THEN sprinkled with my first layer of confectioners sugar.
Tricks of the Treat Trade
One challenge of the marshmallows that must have been looming in my mind is how sticky they are to work with once ready. To counter the high stickiness factor, use plenty of powdered sugar that you can combine with a couple of tablespoons of cornstarch and put in a sugar shaker for maximum ease.
Alternatively, simply have a medium sized bowl on hand that you can dip each of your cut marshmallows into and easily coat all 6 sides.
Once all of your marshmallows are cut and sugar rolled, you can place them in air tight containers with parchment paper between layers for the best results.
