Salted Dark Chocolate Special K Bars Recipe

We are deep into bake sale season and I have a favorite Salted Dark Chocolate Special K Bars recipe to share. My dark chocolate and butterscotch topping elevates this classic bar recipe just a little.

Amping up the care in bake sale fare raises the perceived value and affords a little higher price tag!

I first fell in love with the taste of Special K bars when my sister made them for the family many Christmases ago. We all instantly asked for more!

And since then, she has gifted us with an annual treat each holiday. I couldn't be more grateful. Just like my sis, I want to share these delicious delicacies with all!

To make these decadent Special K cereal bars you'll start with a candy base of Karo syrup and sugar that you combine on the stove top. Once it's hot an bubbling, you'll stir in your creamy peanut butter and vanilla.

If you want to make these seasonal, consider adding in other extract flavors: hazelnut, or another nut such as almond, peppermint, butterscotch, coffee and more.

Next, you'll add in your loads of crunchy cereal that gives these Special K bars their crunch and solid texture.

Finally, you'll pour your butterscotch and dark chocolate chips over your base that's been set into a 9"x13" sprayed dish. Pop this in the oven to melt the chips and you're almost there!

When the chips are melted after about 5 minutes, take them out and spread them with a sprayed spatula to get the chocolate and butterscotch mixture all the way out to the corners of your pan.

Sprinkle with sea salt and let your pan of bars cool in the refrigerator for an hour. Take these out and cut into bake sale size bars. Consider making bundles of large bars and mini bars that are bite size fun!

Salted Dark Chocolate Special K Bars 
Delicious Special K Bars for dessert and bake sales!
Ingredients
  • 1 c plus 1 TBS Light Karo Syrup
  • 1 c sugar
  • 1 c creamy peanut butter
  • 1 tsp vanilla
  • 6 c Special K Cereal
  • 1 standard bag dark chocolate chips - 53% cacao
  • 2/3 bag butterscotch chips
  • Sea salt to taste
Instructions
Preheat oven to 350 degrees.Spray a 9"x13" baking pan or dish with cooking spray.
Next, In a large saucepan, cook Karo syrup and sugar until bubbling. Take off heat and stir in peanut butter. 
Now, stir in cereal.
When mixed, pour into prepared pan and spread with spatula.
Now, pour dark chocolate chips and butterscotch chips over the top of your cereal/sugar mixture.
Place in the oven to melt the chips until glossy (this will indicate that you can easily spread the chips into a smooth topping) about 5 minutes.
When candy chips topping is glossy, remove from oven and use an offset spatula to spread.
Sprinkle coarse sea salt on top.
Refrigerate for up to a day.
Cut up and enjoy!
