Mashed Potato and Green Bean Fritters Recipe

We are cooking a lot at home these days while playing our part in Social Distancing.

And as I'm not always the best at limiting volume of my recipes to just four people, we're also enjoying leftovers!

My mashed potato and green been fritters recipe is part two of rib eye steak dinner served with mashed russet potatoes dressed up with one sweet potato and a healthy serving of green beans.

We didn't make it through all the veggies, but the rib eye went quickly!

My husband makes his favorite mashed potatoes using 2 large russets and 1 medium to large size white flesh sweet potato. He generally skimps on the butter, salt and sour cream, so you'll find I dress these fritters up accordingly.

Leftover Love

It can be fun to reinvent food into tasty dishes for the family.

Vegetables of any kind are the perfect ingredient to play with. Here are a few ways I use left over cooked veggies in my dishes for any meal.

Breakfast

  • Veggie scramble with a bit of meat as optional
  • Vegetable frittata
  • Breakfast bowl with grains and warmed vegetables

Lunch

  • Vegetable soup - saute veggies until soft, add salt and pepper, a can of beans, a cup of dry pasta, some chicken or veggies stock and a wedge of Parmesan rind.
  • Panini with sliced veggies, cheese and optional sliced meat
  • Tossed salad with greens and seasoned, chopped veggies, nuts, beans and cubed salami, chicken or turkey and a sliced hardboiled egg

Dinner

  • Veggie fritters like my mashed potato and green bean fritters
  • Vegetable lasagna
  • Shepherd's pie

Mashed Potato and Green Bean Fritters Recipe

This recipe is a great solution to leftover mashed potatoes, but ins't just an afterthought.

The most important part of any fritter regardless of your chosen vegetable is the binding agents - egg and bread crumbs - to bring the batter together.

If you're using wetter veggies like zucchini, be sure to dry these thoroughly before mixing your batter.

Likewise, if you're using leftover mashed potatoes these can be a bit dry to ensure that your batter is tasty by adding a tablespoon of milk, half and half or cream if needed.

Mashed Potato and Green Bean Fritter Recipe

Delicious and crispy fritters using leftover mashed potatoes and green beans.

Ingredients

  • 1 cup +/- mashed potatoes
  • 1 cup +/- chopped green beans
  • 1 egg
  • 1/2 bread crumbs - make your own with one slice of bread crumbled to fine consistency
  • Salt and peper
  • 1 TBS milk (optional if batter is a bit dry)
  • 1 TBS olive oil
  • 1 TBS unsalted butter

Instructions

  • Heat skillet on medium heat.
  • While skillet is warming up, combine potatoes, beans, egg, bread crumbs and salt and pepper in a bowl.
  • Add olive oil and butter to the skillet.
  • When butter and oil are hot, spoon 2 TBS of batter into skillet and press down lightly with a spatula.
  • Fill skillet with fritters.
  • Let cook for 4-5 minutes or until crispy brown.
  • Flip fritters and cook for another 3-4 minutes.
  • Turn off heat.
  • Remove fritters from pan and plate.
  • Serve with cold sour cream.
  • Garnish with salt and pepper to taste.
