These morning glory muffins make me think about our local Farmer's Market and how much variety can go into these healthy, yet moist muffins.
I love serving these in the morning to the kids with a fruit smoothie to jump start their day! My husband loves them with his coffee too. And Morning Glory muffins with sprinkles or some coarse sugar make a special birthday morning treat too.
I use a little greek yogurt in the recipe to amp up the protein for these morning glory. I've polled my pals too and there are so many fruits and veggies to try in your unique morning glory muffin.
Try These Morning Glory Muffin Add-Ins
- Pineapple chunks
- Cranberries
- Shredded zucchini
- Raspberries
- Chopped apple and pear
- Any type of your favorite nut
DIY Tulip Parchment Liners
I love to use tulip muffin and cupcake liners that remind me of weekend bakery runs.
Don't spend the money on pre-made parchment tulip muffin tin liners and make your own. Parchment paper is so great in that it will easily hold a fold.
To make your own tulip parchment muffin tin liners, simply cut parchment paper into 6" squares. Lay the paper on the top of a champagne flute (a tomato paste can is the same size too!) and make your pleats by folding down the paper over the glass in a clockwise direction.
Transfer the tulip parchment liners to your muffin tin and you'll be ready to fill with your morning glory muffin batter.

Morning Glory Muffins Recipe
- 2 c All-Purpose flour
- 3/4 c Light brown sugar
- 1 TBS Baking powder
- 2 tsp Baking soda
- 2 tsp Ground cinnamon
- 1 tsp Ground ginger
- 1/2 tsp Salt
- 3 Eggs
- 1/2 C Greek yogurt (plain)
- 1/2 C Vegetable oil
- 2 C - approx 3 med carrots Shredded carrots
- 1 small Shredded apple
- 1/2 C (soaked in water for 10 min to plump 'em!) Raisins
- 1/2 C Shredded sweetened coconut
- 1/2-3/4 C depending on your preferences Walnuts
