If you have warm weather entertaining on the brain like I do, I have some festive ideas to help kick off your party circuit!
Invite a few friends and neighbors over for my Raspberry Bacardi Rum and Coca-Cola® Cocktail and pair with my easy whipped goat cheese crostini with balsamic drizzle to delight every sense this spring and summer!
Easy Party Prep
To kick off your party planning, gather a few tools to have on hand at a moment's notice. Of course, you'll need ingredients for your signature cocktail and it's easy to purchase, store and serve everyone's favorite Bacardi Rum and Coke.
Pick up or pull out of the cupboard a few supplies, including:
- Beverage serving tray
- Cocktail sized glasses - 8 oz to 12 oz are best
- Cocktail mixer, shot glass and strainer
- Stir sticks or bamboo skewers for garnish
- Small paper cocktail napkins in a fun print or cloth napkins that can double as decor
- Small plates for serving appetizers
- A couple of small vases to fill with store bought or yard-snipped blooms
- Votive holder and candles to add ambiance to the golden hour (dusk). Try using jam jars as tea candle holders. They're inexpensive and add a fun vintage vibe.
- A couple of melamine food serving platters that can be cleaned in the dishwasher and are light weight so you're not straining your arms moving food to and from the kitchen to your entertaining area.

Raspberry Rum and Coke Cocktail
To mix up this tasty cocktail, combine the first three ingredients in the list below, pour over ice and garnish with a few fresh raspberries.
- 1/2 oz. Bacardi Rum - Bacardi Superior
- 1/2 oz. Bacardi Raspberry Rum
- 1 - 7.5 oz. Coke Mini-Can
- 3 fresh raspberries
- Raspberry Ice (A day in advance of your party, freeze a raspberry in each cell of a standard ice tray for a festive and surprising beverage treat.)
Raspberry Goat Cheese Crostini Recipe
Start with a fresh baguette or skip the slicing and grab a bag or box of pre-sliced crostini crackers.
If opting for a fresh baguette, cut bread into 1/2" slices, brush with olive oil and toast in a 350 degree oven for 5-10 minutes, flipping once.
Next, whip 4 ounces of goat cheese and 4 ounces of mascarpone cheese with a teaspoon of milk and a dash of salt and pepper. Whipped goat cheese is light and delicious as well as easy to spread and serve.
Combine 1 tablespoon of balsamic vinegar with 1 tablespoon honey.
Now spread whipped goat cheese on toast slices, drizzle with balsamic honey mixture and top with 1 or 2 raspberries and a mint garnish if desired.
Serve on a platter and delight your hungry guests!
