Red, White and Blueberry Bruschetta
We're prepping for a long holiday weekend to celebrate summer and the Fourth of July and I can't wait! We have a few plans with friends and family, but mostly we'll be lounging, walking, biking, game playing, baseball watching, chatting, laughing and eating! I'm serving my favorite red, white and blueberry bruschetta that is too easy to make.
This easy appetizer that can double as a quickly made lunch combines the best of summer fruit with my fresh and creamy balsamic vinegar cheese spread.
I've made plenty of bruschetta that feature balsamic vinegar reduction for a drizzle here and there, but what's great about this balsamic vinegar cheese spread is that it's delicious and blends the tart balsamic with the sweet fruit in every bite.
The cheese blend couldn't be easier and lends itself to lots of variation in flavor. I use a scant 2 Tablespoons of my favorite balsamic vinegar, but you could use more and even add a bit of of honey if that makes it more palatable for your little guests.
Make sure to have a little left over balsamic cheese spread to use on club sandwiches throughout the holiday weekend.
For the red and blue fruit, I love to combine sweet summer strawberries with big, plump blueberries, but you could use raspberries and blackberries for the same visual effect. If you're lucky enough to have raspberry and blackberry bushes in your garden or neighborhood, by all means try those! Or pair them all and have a summer fruit taste test.

- 4 oz Goat cheese
- 2 TBS Sour cream
- 2 TBS Balsamic vinegar
- 1 tsp Garlic salt
- 2 TBS Olive oil
- 3 TBS Basil, chopped as garnish (optional)
