Serves: 2 cups
Sweet and crunchy curry chicken salad is loved by kids and adults.
  • 1 c cubed cooked chicken
  • 1/2 chopped celery
  • 1/4 c chopped grapes
  • 1/4 c golden raisins
  • pecan, almond or walnut pieces (optional)
  • 1/4 c mayonnaise
  • 1 Tbs Dijon or honey mustard
  • 1 Tbs curry powder
  1. Combine all ingredients in a bowl.
  2. Serve on a toasted baguette or whole grain bread.
  3. For a gluten free option, scoop on a bed of green leaf lettuce salad or serve with rice crackers.
