Is your breakfast menu a little tired? I seem to run through 3 to 4 breakfast options that the kids love, but even then feel like I'm not getting enough variation into their most important meal of the day. I try to serve eggs once per weekday, but while little miss loves a big scoop of scrambled eggs, junior shies away from his sister's favorite meal. I whipped up this kids huevos rancheros recipe with junior in mind and combined our favorite corn chips with eggs, avocado and mild salsa verde with success.

I skipped the beans as the kids prefer their beans on taco night. Be sure to add a little salt, pepper and a dash of Parmesan or cheddar cheese to your eggs for some great flavor. I hope you'll try this really easy, nutrition breakfast that's a snap on a busy weekday morning or fun for a leisurely brunch to make with the kids.

Serve kids huevos rancheros with a fun orange juice and sparkling water kiddie cocktail for Saturday morning breakfast on the sunny deck. And if you want to amp up the flavors, play with the recipe for an adult audience or try this huevos rancheros recipe from Epicurious.com. Fried eggs and tortillas make a great presentation.
