Eggplant Mozzarella Recipe
Oh how I love this recipe! This meatless Monday eggplant mozzarella recipe is great for family meals or easy for dining a deux. I make this recipe constantly and alternate between adding a bit of zesty marinara and fragrant pesto to the top of each eggplant wheel.
I also love to serve the eggplant mozzarella on a bed of arugula or baby greens to create a salad like dish with extra nutrition.
Try this over a bowl of al dente spaghetti for a comforting meal that's healthy and fast!
The best part of this recipe is that with only 5 ingredients, including salt and pepper, you can have dinner ready in no time with little fuss. And if you want to really amp up the nutrition value, try pairing this with my Kale Basil Pesto recipe.
In my recipe instructions below, I opt to bake at a 350 degree oven, but you can just as easily and effectively grill your eggplant. Set your grill to medium and grill for 10 minutes to start and adjust as necessary.
