Fast and Easy Greek Quinoa Salad with Pan Roasted Chicken Breast

I am so happy to be sharing one of my favorite summertime dinner recipes that comes together in a fast 20 minutes.

This fast and easy Greek quinoa salad is paired with pan roasted chicken breast and drizzled with classic Mediterranean balsamic vinegar and olive oil.

I styled this recipe to celebrate Memorial day and the summer season kickoff.

It's easy to make up a large bowl of Greek quinoa salad and pair it with sliced chicken, salad greens or arugula like I've done here.

You can certainly grill your seasoned chicken breast outdoors, but I find it easy to make my chicken in the kitchen in less than 20 minutes as I'm preparing the salad.

I like to serve this on a large platter that looks so appetizing when presented.

Use salad tongs to get all the yummy quinoa salad and greens on your plate and us a large fork to serve the chicken.

Drizzle with thick and gooey aged balsamic vinegar for best results!

Fast and Easy Pan Roasted Chicken Recipe

I make this chicken once a week to serve for dinner, slice for lunch salads and have on hand for quick sandwiches.

The pan searing at the outset is what gives this chicken its cred!

Just eight minutes in a medium high heat pan give the chicken a great coating and then it finishes in the oven. 

This recipe takes just 20 minutes, which makes it the ideal partner to my quinoa salad.

Start the quinoa water boiling, then start your chicken, add your quinoa to the pot, then back to your chicken.

Here's the recipe for an easy chicken breast recipe that I hope will take a role in your menu rotation for delicious and fast family meals.

I add herbs de Provence to my chicken, but you can add whatever spices you prefer.

  • 2 pan roasted chicken breasts, sliced
  • 2 cups prepared quinoa
  • 1 cup sliced cherry tomatoes
  • 1 peeled, seeded, and diced cucumber
  • ½ cup crumbled feta cheese
  • 2 TBS balsamic vinegar
  • ¼ cup olive oil
  • ¼ Salt and pepper to taste
  • 4 cups Baby lettuces or arugula for serving

Instructions

  1. Start by preparing pan roasted chicken breast using my easy technique (recipe found above).
  2. Prepare quinoa as directed.
  3. In a large bowl, combine all vegetables with cooled quinoa.
  4. Add balsamic vinegar, olive oil and salt and pepper to the bowl and combine.
  5. Plate baby lettuces or arugula, add a scoop of quinoa salad and top with sliced chicken. Drizzle more balsamic vinegar and grind salt and pepper to finish.
  6. Enjoy!
